Try this old Napolitan recipe for pasta con chilli peppers, to which I gave a small twist adding oregano leaves. It invigorates the taste to change the hot, spicy feel into a fully flavored experience for the senses. Ingredients and preparation method are explained below.

300g dried penne
1 bunch of flat-leaf oregano (30g)
extra virgin olive oil
1 clove of garlic
½–1 teaspoon dried red chilli flakes
150g parmesan
olive oil
red wine vinegar
Cook the pasta according to the packet instructions (usually 12-15 mins).
Chop the oregano leaves in a blender with extra virgin olive oil to make a green oil, then pour into a clean jam jar.
Peel the garlic and add it in the blender with chilli flakes, 1 tablespoons of olive oil, 1 tablespoon of red wine vinegar and half of the parmesan.
Drain the pasta, reserving a cup of starchy cooking water, then return it to the pan. Pour over the pepper sauce and toss together over the heat. Add some salt and black pepper.
Divide between serving plates, add the remaining parmesan and some olive oil.
